Tencha
The shade-grown, steamed, de-stemmed leaf that is ground into matcha. Matcha cannot legitimately be made from anything else — powdered sencha is a different (and lesser) product.

Tencha supply shortages since late 2024 are the root of current matcha authenticity problems.
